Focus and Scope

ZIGMA publishes both research and review articles related to food technology, food science, and nutrition. The scope of this journal includes, though not limited to the topics of food chemistry, food biochemistry, food microbiology, food biotechnology, food safety, food engineering, food quality, food sensory, development of food products, functional food, nutrition and health, and other food related topics.

ZIGMA is a peer-reviewed, Open Access journal and published periodically in one volume of two issues per year (May and December).

Open Access Policy

ZIGMA provides immediate open access to its content on the principle that making
research freely available to the public supports a greater global exchange of
knowledge.

All articles published Open Access will be immediately and permanently free for
everyone to read and download.
